O Tamboril is a small restaurant that opened in the new-town district of Santiago de Compostela in 2007. Later that year, Cristóbal Rey joined our project as head chef, and rice began to feature more prominently in our menu, sharing space with other dishes, which may be less associated with O Tamboril, but that are equally delicious and prepared with the same passion. O Tamboril is not only a restaurant but also a large family, where customers, friends, suppliers and each every people who are and have been part of the team represent an equally important part. Together we have created a calm, welcoming and, at the same time, casual atmosphere. We enjoy what we do as much as the day we started, and we continue to work with the same passion to make those who visit us enjoy a pleasant moment around a table. No more, no less. It may sound simple, but to us, it turns out to be incredibly stimulating. We look forward to seeing you at O Tamboril!
